There are two types of notarizations: acknowledgments and jurats. An "acknowledgment" by a notary confirms that the person's identity was verified with evidence that is acceptable by state regulations. It proves person who signed the document is the person who appeared before the notary. A "jurat" confirms the identity of the signer, but also requires the signer to swear and affirm that the information in the document is correct.
As a signer, it is important to know before your notary appointment which type of notarization you need for your document. A notary should never advise a client which type of notarization they should use.
As a a traveling mobile notary, however, it is important to carry loose "all purpose" acknowledgements and jurats to every appointment. The person who is having their signature notararized may not have the proper notarial wording, or outdated wording on their document. It is the notary's responsibility to make sure the "notarial" verbage is correct to comply with the state's requirements, however the notary should never determine what TYPE of notarization to use.
